Mushroom Biryani

Spicy, tasty and easy Mushroom Biryani using Indian masalas. When you look for flavourful vegetable biryani, mushrooms are my first choice. Fallen in love with mushrooms, obviously it is tasty and healthy.

Mushroom Biryani
Ingredients:
  1. Mushrooms - 2 packets

  2. Basmati Rice - 2 cups

  3. Oil - 4 tbsp

  4. Onions (medium) - 2

  5. Green Chiilies - 2

  6. Cashews - Few (optional)

  7. Ginger Garlic Paste - 4 tsp

  8. Tomato (big) - 1

  9. Mint and Coriander Leaves - Few

  10. Garam Masala - 1/2 tsp

  11. Pepper Powder - 1 tsp

  12. Biryani Masala Powder - 4 tsp

  13. Water - 3 cups

  14. Salt - as per the taste


Garam Masala Ingredients:

  1. Bay leaf/Pullav Ele - 2

  2. Cinnamon/Chakke - 2 inch

  3. Cardamom/Elakki - 8

  4. Cloves/Lavanga - 6

  5. Pepper Corn/Kaalu Menasu - 12

  6. Shahi Jeera - 2 tsp

  7. Stone Flower - Few

  8. Star Anise/Naksthara Moggu - 1

Mushroom Biryani
Method:
  1. Soak Basmati Rice in water for 20 minutes and keep aside.

  2. Heat Oil in a pot or cooker.

  3. Add Garam Masala ingredients and fry until nice aroma.

  4. Add sliced Onions, chopped Green Chillies and Cashews and fry till Onions turn light brown.

  5. Add chopped Tomato and Ginger Garlic paste and fry till Tomato turns soft.

  6. Add sliced Mushrooms and cook for 1 - 2 minutes.

  7. Add chopped Mint and Coriander leaves.

  8. Add Garam Masala powder, Pepper powder, Biryani Masala powder and Salt. 

  9. Saute for few minutes.

  10. Add drained Basmati Rice and mix it slowly.

  11. Add Water then close the lid and cook the biryani, till the rice grains are done. 

  12. If using pressure cooker, cook it for 1 or 2 whistles.
