Mushroom Biryani

Spicy, tasty and easy Mushroom Biryani using Indian masalas. When you look for flavourful vegetable biryani, mushrooms are my first choice. Fallen in love with mushrooms, obviously it is tasty and healthy.

Ingredients:
Mushrooms - 2 packets
Basmati Rice - 2 cups
Oil - 4 tbsp
Onions (medium) - 2
Green Chiilies - 2
Cashews - Few (optional)
Ginger Garlic Paste - 4 tsp
Tomato (big) - 1
Mint and Coriander Leaves - Few
Garam Masala - 1/2 tsp
Pepper Powder - 1 tsp
Biryani Masala Powder - 4 tsp
Water - 3 cups
Salt - as per the taste
Garam Masala Ingredients:
Bay leaf/Pullav Ele - 2
Cinnamon/Chakke - 2 inch
Cardamom/Elakki - 8
Cloves/Lavanga - 6
Pepper Corn/Kaalu Menasu - 12
Shahi Jeera - 2 tsp
Stone Flower - Few
Star Anise/Naksthara Moggu - 1
Method:
Soak Basmati Rice in water for 20 minutes and keep aside.
Heat Oil in a pot or cooker.
Add Garam Masala ingredients and fry until nice aroma.
Add sliced Onions, chopped Green Chillies and Cashews and fry till Onions turn light brown.
Add chopped Tomato and Ginger Garlic paste and fry till Tomato turns soft.
Add sliced Mushrooms and cook for 1 - 2 minutes.
Add chopped Mint and Coriander leaves.
Add Garam Masala powder, Pepper powder, Biryani Masala powder and Salt.
Saute for few minutes.
Add drained Basmati Rice and mix it slowly.
Add Water then close the lid and cook the biryani, till the rice grains are done.
If using pressure cooker, cook it for 1 or 2 whistles.
