Homemade Paneer

Paneer can be easily made at home by curdling the milk.

Ingredients:
Milk - 1 Litre
Lemon Juice - 1 tbsp
Pinch of Salt (optional)
Method:
Place a thick pan on the medium flame and pour the one litre Milk into it.
Bring it to boil, stir occassionaly to prevent forming of foam on top.
Once it comes to boil, keep the flame to low and add Lemon Juice.
Stir until milk curdles and water gets separated completely. At this stage, u can add more lemon juice, if required.
Once done switch off the flame and pour the contents from the pan into a muslin cloth to drain off the water completely.
Rinse the paneer, with cold water to get rid of lemon sourness.
Squeeze off the water completely. Do not over squeeze it.
Then add pinch of Salt and mix well to give flavour (optional, u can avoid).
Now wrap the cloth and press on the cloth to give it a flat shape and also, place a heavy weight on the paneer for 20 to 30 minutes to get it set.
After 30 minutes, the paneer block will be ready for use.
